Mini Avocado Popsicles
Avocados bring back fond memories of hot summer afternoons and post-siesta snackage. That, and banana-cues. Where I come from, avocados were the size of bowling balls* and were meant to be enjoyed as a sweet treat– in the form of a smoothie or simply cut up in chunks and eaten with milk and sugar. Ask Filipinos if they put it in their burgers and they’ll give you a weird look.
With that, I give you avocado popsicles! Tried and tested by a select group of food tasters that is my book club crew, these mini pops are a delicious, healthy summer treat that (I think) everyone will come to love. So before you knock it, try it for yourself!
Avocado Popsicles
Adapted from the book Paletas (by Fany Gerson)
3 large avocados
1 1/2 cups sugar
1 1/2 cups milk
4 tablespoons fresh lime juice
a pinch of salt
Heat milk and sugar in a saucepan until sugar is dissolved. Cut up avocado and scoop into a bowl. Add the milk and sugar mixture and mash until smooth and well blended (use a food processor or blender if desired). Add lime juice and salt.
Pour mixture into popsicle molds and freeze thoroughly. Remove, and enjoy.
(*Okay maybe not. Maybe more like bocce balls.)
